Suggestions for new irons

Just a little background, I play off single figures (7) and play most of my golf in the UK, where in summer, conditions are incredibly firm and fast yet in winter soft and the ball stops dead.

I don't struggle with distance necessarily. The irons I currently game are a 4-PW set of Taylormade PSi irons (Not custom fit), I'm a relatively good ball striker and my pattern on strikes is probably middle to slightly toe bias.

For example, with my Psi 7 iron it carries around 175 (that at 31 degrees of loft) so I don't mind that yardage being my 6 iron if the set I go for is slightly less forgiving and has truer lofts.

Basically, I'm looking for a make up that I can work with: Hit high shots with stop in both summer and winter, and low chasers for when the fairway runs out forever in the summer. I primarily hit a 5 yard draw with my irons and most clubs but can hit a 2 yard fade if required. Workability inst an issue necessarily, but would be nice to have confidence to do it more often and more on demand.

I had in mind a set of Titleist CB's or AP2 but i'm open to suggestions from fellow WRXers.

I would suggest looking at the Srixon 785 and Mizuno 900/919 Forged. Both extensively reviewed and endorsed but also would work well given your conditions - particularly the hard summer turf. The Mizunos especially given the low bounce. I liked both these sets and FOR ME, the Srixon were more versatile likely due to the V-sole...but the Mizunos were fantastic from harder turf and tight lies. I have neither in the bag and needed more consistent bounce and went with i210's. If I bought clubs from results of hitting off mats, the Mizunos would be the easy choice.

Newest AP2 is fantastic. Just make sure you get the shaft right. 716 CB is also great. Not a great deal of difference in forgiveness but my scores are better with AP2. You can get away with a lot. More help than you'd think given how small they are. 7x5 series mentioned above is well regarded but lower launch/lower spin so make sure they fit you. 919 Forged had too little bounce and too wide of a sole for me.
