Isnt cheese a topping?

Xtra cheese would be imo.

How would one know where the original cheese starts and the extra cheese ends? And isnt "Extra Cheese" a bit derogatory?

I had two hours to kill in New Haven last week, and decided to grab some lunch at Bar. Based on the reviews, it's supposed to have some decent pizza, or apizza as they call in in NH. Anyway, I was not impressed. I've had better New Haven style pizza here in Chicago at Piece brewery. I understand that there are more famous places for pizza in New Haven, so I might have to give them another shot if I'm ever back in town.

Give me a plain pie. Maybe margherita. Why mess with perfection by adding superfluous toppings.

 

I'll have an ice cold soda to go with it. A well made root beer, birch beer, or sarsaparilla (if you can find it) would be nice. An orange or cream soda are not without their charms.

 

Nice and good timing.

 

Had a plain cheese sicilian pie from this killer place on Thurs.Ate a couple of slices.

 

Then, yesterday, we bought some super thin sliced prosciutto di parma for appetizer for new years eve.

 

Heated up a couple of slices of the pizza and put a slice of the prosciutto on each one just a minute before taking out of the oven. Man, thats good.

 

Got a couple of slices left. May do it again today!

I just ordered a Roccbox pizza oven, and pretty excited about it. So far I've been cooking my pizzas in my big green egg, which maxes out at maybe 800 degrees and that is just for a short time. This new thing is a small "portable" oven that you can use wood or gas and get it over 900 degrees for authentic Neapolitan margherita pizzas.

Hey, do you have any updates about the Roccbox? I’m curious to see if you still like it and use it often enough to justify the cost.

I friggin love this thing. I use it once a week at a minimum, and sometimes twice. Friday nights are still our pizza nights, so it's a given it's getting used then. Every now and then the wife will request it on an odd night.

 

I just used it this past Sunday in below freezing temps, and it worked like a champ. It takes longer to preheat than they say if you want it max temp. I give it a solid hour to preheat, and since I have it hooked up to my permanent 250 gallon propane tank I don't have to worry about running out in the middle of preheating.

 

No cleaning necessary, only to knock off built up deposits on the roof. It will get black and build up over time, and I just knock it off with a metal tool I use with my big green egg. I then just push all the black soot to the back, off of the stone and around the burner. Once it's at roaring temps for about 45 minutes, that stuff just burns away and the stone is clean as a whistle.

If I'm at home with the fam, Margherita pizza or cheese w/ turkey sausage and spinach.

 

Recently went to a gastro-pub and had a pie w/ pesto, feta, sun-dried tomatoes, duck crackling, and arugula and it was pretty amazing.
