Limoncello?

Does anyone like drinking Limoncello the Italian after dinner drink? After drinking lots of Limoncello in Italy, last year I started making my own and after a couple of try's I have it down. I make it with organic lemons, Everclear 190 proof 95% alcohol by volume and simple syrup. I can't buy Everclear 190 in California so when one of my co-workers drives to Vegas he brings me back 1.75 liter bottles. My wife bought me lots of 2 oz. bottles so when I'm golfing with friends I bring some 2 oz. bottles to drink either during or after our round.

Why “cover loosely” to infuse? Won’t you lose alcohol to evaporation? I have the everclear and have been tempted to make it, but alcohol is enough sugar without all the sugar.

I use 15 organic lemons because that aren't sprayed with anything which you don't want because you're using the zest . I use a ceramic pot with a glass lid that seals tight. I put the lemon zest in the pot and add a liter of Everclear. I put the lid on the pot and I cover the glass lid with a towel and leave it in a cool darker room for 3 -4 weeks. When I make my simple syrup I use 6 1/2 cups of water and 5 cups of sugar although you can adjust the ratio to your liking. I strain the lemon zest from the Everclear and once the simple syrup reaches room temperature I pour it into the pot with Everclear mixture. I pour the Limoncello into 32oz and 16oz bottles with bottle caps and put them in the freezer. Ready to drink and enjoy when cold.

I love Limoncello. My favorite restaurant in town makes their own. Delicious!

Grazie! Italy is one of our favorite countries to visit although we've only been to Rome, Florence, Pompei, Naples, Positano, Capri. We discovered Limoncello in Positano and it's one of my favorite drinks. I used to travel to Novara for business and I've stayed in Milano.

always liked this liquor.

attended a family member birthday yesterday. good friend of theirs makes his own.

had a case in the trunk of his car and gave me a half liter bottle.

great flavor. he uses vodka though I'm not sure which brand.

got me thinking - I can do this.

would probably start with the vodkas I like to drink for a good base.

Nothing wrong with vodka although in Italy they use a grain alcohol like Everclear at 190 proof. Made with Everclear it goes down smooth but will give you a jolt that vodka doesn't do. By the way I'm a vodka drinker.

Forgot to mention when comparing Vodka and grain spirits such as Everclear, the higher alcohol content in neutral grain spirits draws out more of the lemon oils than vodka, imparting more flavor to the liqueur.

 

I'm going to try making it with oranges as I bought some organic oranges today.

I prefer Averna.  In summer late at night in a tall glass with ice, lemonade and a slice of lemon.  Perfect!
