Stuck in between rock and hard place on new irons

So I've played TaylorMade's GI irons for as long as I've played golf (12+ years) and I'm to the point now that I want to look at something different. I have an old TM Rocketballz 5 wood that I really like that is 19 degrees and I see the new M2 irons have a 4 iron with that exact loft! The lofts are just getting too crazy for me. I want more standard loft irons like the AP1's or the Ping i200's. I don't feel like I'm good enough to get a full blade set like iBlades or the MB's but I hit the ball relatively solid. My only real miss is getting quick from the top and hitting it a shade fat or hitting a pull/draw/hook depending on the club I'm hitting and how quick I get. My swing has been completely re-done last year resulting in a much smoother on plane swing. The big problem I'm having is that I'm left handed and the place I went yesterday (great training place that fits clubs) didn't have anything in stock that I could in LH but they had a Ping Demo Day. Even at the Demo Day, I was only able to hit the i200's because that was all he had in LH. I don't like the idea of getting fit for irons indoors which is the majority of my options around me. I was satisfied with the 7 iron I hit with the i200's, my ball speed was around 120-122 on good shots (not me getting quick) and the carry was around 170 on a flush and 160-165 on mishits which is basically what I do now EXCEPT my 7 iron is 30.5 degrees, not the 33 degrees that the Ping club was! Any advice on what you guys would do? I've been a TM whore in the past and I'm really trying to find what is best for me now.

I would definitely like to hit more shafts iron wise because I only hit the stock one in the Ping I200's but I did like it. Looking at it, the AP2's and Apex Pro 16's are about a degree softer than the i200's but the AP2's don't come with an AW I would like to have. Guess I'll end up going to Golf Galaxy or Edwin Watts an hour+ away and testing the i200's vs the Apex Pro 16's with different shaft options and seeing how they compare. I would probably bend that Ping UW down to 49 or so though because I don't like the idea of more than 4 degrees of separation in your scoring clubs.

The AP2 have a gap wedge at 50*.

 

Didn't see that at the stores I was looking at. That makes them a little better option. Hate to say it but price comes in to play as well. The i200's are close to $200 cheaper overall. Think I may do what you suggested and focus on the shafts mostly and then just make sure I hit the best shift with the i200's in the same range as the Apex and AP2's

I may be selling my i200's 5-U DG X100 soft stepped X1.

 

Very close to what I need lol but I'm going to pass on the X stiff. People MAY say I need it based off distance and #'s but I like hitting the ball higher and I don't come close to ballooning my irons now so I like to stick with stiff. Think our club has a ping account that I can get the price at wholesale +10% or so and just order exactly what I want. Going to experiment with shafts and then double check that I need blue dot because my miss lately has been a draw more than anything.
