I have done both.  If a golfer knows what they are looking for, knows what works for them, can make loft/lie adjustments themselves, can reshaft the clubs if need be then I say buy used.  I have purchased many used golf equipment form drivers, fairway woods, sets of irons, wedges.  The only club I buy new to game are putters and I have a small putter maker I order from.  My current set of irons were purchased new, first new set of clubs I have purchased since my Mizuno MP32s in 2004.  I have purchased never been hit driver/3 woods (head only).  I know what shafts work for me for all clubs and will reshaft myself.  My 2 iron hybrid was purchased new but I have replaced the shaft twice.  My wedges are always purchased new, head only if I can find what I want (Scratch Golf and I do have a couple of new spare heads for my wedges waiting to be used).

Golf is a fickle game and there is no right or wrong answer here.  I would personally prefer slightly used irons because the cost drops and condition should be good.  I do not buy any used equipment that is well used unless they are collector sets, which I no longer do except for persimmon woods.

You'll learn "the ways of the ho" soon enough, my young padawan.... Used goods is the only sustainable way to try many different options without filing for bankruptcy! The BST is your friend, once you're able to use it that is.
