The best players in the world don't have this problem. You don't have this problem. It's in your head, but if you get your fit right you'll be fine.  

I don't have a problem feeling the head/face on my Sim fairway, but have to say that my Adams TL Tour bonded feels amazingly better than the last few fairways I've had.

I sense a feel difference is more noticeable in FWs with lighter shafts than those with heavier shafts.

To me zero difference.  I do recall the early versions 10 years or so ago seemed a bit bulky and felt different.  But it may have just all been in my head as it was new tech.

There is nothing inherent in the two designs that would influence that, no. It sounds like you may have misattributed a lack of said feel in a fairway to the adjustable hosel when there may have been either static or swing weight differences. Head weight is going to be the biggest factor for most people re: feeling face/head.
