Club fitting confusion........

I'm scheduled for a club fitting in a couple of weeks and have been reading up on the subject. I've also been to several golf shops to demo several shaft and head combinations. Right now, I'm pretty much sold on the Mizuno line but here is my question.

When I review charts for fitting clubs and factor my height and wrist to floor combination it most generally tells me I need a shaft that is +1/4" or +1/2" depending upon the manufacturer. When I demo regular/standard clubs, everything i hit is thin and out towards the toe according to the impact tape. When I get to +1/2" it gets closer to the club center. When I get to +1" I'm in the sweet spot every time

I've recently gotten back into the game and my old clubs are off the rack Hogans from back in the 80's. Back then I was much younger and played to an 8 or 9 hcp. and hit my irons on center most times. Fast forward to today, my hcp. is twice that but.......... A) I'm much older and range of motion has decreased somewhat and B)......... I've had a back surgery during my time away from the game, so when playing, a more upright stance is much more comfortable to me now. More often than not, today, my irons are hit thin and towards the toe and I'm thinking that the extra inch in length is what I need. (at least it seems that way when I demo the clubs)

The charts say otherwise.............. as stated before, they say +1/4" to +1/2"

Are the charts just a starting point?

How much of a role does stance and swing style come into play when getting fitted for clubs?

Since quality clubs are a sizable investment, I'd like to get it right the first time around. Any help - advice - opinions are welcome.
