Fitting a utility iron into combo set. Callaway Apex UT'24 into Apex Pro/CB/MB set

I currently am in the market for a new set of irons. I have the Callaway Apex UT 24' in a 23deg and it is already one of the best clubs I've owned.
Was hoping to get 5-6 Apex Pro and 7-11 in the CB

Here's my issue, 
The offset on the UT 23deg comes in at 2.0mm
The 5 iron in the Pro (25deg) comes in at 3.0mm
Even the CB 5 iron (26deg) is a 2.8mm if I went that route

Generally you want offset in increase as the irons get longer, but with the UT it's a very low offset club. Will this be an issue? The UT seems to blend better with the MB set but I can't see myself being successful with MB long irons.

Am I overthinking it?

You are in fact massively overthinking it.

 

I do the same with my Srixon set. It works well. I’ve never thought about the amount of offset being an issue. It isn’t
