if you're keeping a handicap, you cannot just choose to take ESC, double par, etc.
your score is your score
I'm still surprised that most handicap systems have the players make the ESC adjustments.
I enter my hole by hole score on US Handicap and the ESC is adjusted by the system. My scoring record will reflect my actual scores and will have a separate column for the ESC score.

I can't remember the exact wording, but I think the USGA says something to the effect that you have to enter a 'most likely score'. So if you've 'tin cupped' from the fairway, you can't just choose double par. You'd have to account for a shot that would actually hit the green and either 1 or 2 putts.

Just be sure to do it quickly as not to get out of position on the course.

I'm not entirely sure I understand your post, but the USGA's handicap system absolutely requires that the score you post for handicap purposes (not the score you actually make that day) must not exceed your ESC on any hole. It is only ESC-adjusted differentials which are part of the handicap record. (Perhaps your system also keeps your non-adjusted score for reference, which can be useful, but it should not reflect that in the handicap system's use of your scoring record. As such, you can pick up on a hole where you will exceed your ESC, and still post a valid handicap score (though invalid from any stroke play competition you are in).

maybe I'm confusing the two (I doubt I'm going to go through the process of verifying)
how can posting your ESC be used for valid handicap score without posting an actual score on the hole? what prevents the sandbagger from posting a card of essentially all ESC scored holes?
I know there is a way to post basically 'X' score for an incomplete hole and I'm almost positive that you're supposed to post a 'most likely' score
