It looks like these two heads have some similarities. Anyone hit both? Preferences?

You can't go wrong with either as I went from the CF 16 to the P790. The P790 from the 6 iron thru the 4 iron were easier to hit and longer for me. They have a better feel as Callaway has a newer version coming out as I'm sure they will be sweet. As far as forgiveness it very close as I had he Recoil shafts in both. You could get a set of CF 16's cheaper so that is a major factor but I would try both out as you might just like the P790's a bit better like I did.

Both good clubs for a certain player. Make sure you hit both in a sim and see if the numbers work for you. Both very low spin so you need to make sure you're getting the descent angle or you'll be rolling off the green on every shot. Personally I'd go the Cally especially for the $$ but you probably won't be able to get them fit now so the stock options would have to work. Money no object I'd get fitted properly for TM or the new Cally 19

Maybe I have that descent angle you're talking about here, but I've had no issues with a lack of spin from the 790s (and no ballooning). The ball seems to want to sit right down with these irons. It's remarkable, really.

Owned 790s for all of 2018, hit CF16 a few times. Both good clubs, 790 felt a little better. CF16 felt very springy/hot but had super low spin. 790 still low spin but seemed to launch the ball a bit better. I never had issues stopping balls on the soft muni greens. If I played a really firm PGA set up, then yeah there probably would have been issues.

Ballspeeds are insanely high with 790's though. I got a fitting in November and I was seeing about 130mph with my 6i. Now with my Miura CB I barely get over 120mph (and spin is about 800rpm higher due to lofts, too).

Will the 790 be replaced by a newer version like the CF 19 has been?

Couldn’t agree more. As someone who was high launch/spin iron player, the 790s have been amazing - the right amount of spin to hold greens but no ballooning whatsoever - and we have had quite a bit of wind here in Nashville lately.
