As regards to the definition my playing partners and I hold to be true for an "up and down":

 

When playing a shot off a missed green -- getting the chip/pitch "up" onto the green, and then sinking a one-putt "down" into the hole.

 

Par isn't relevant when I play. I'm happy to get "up and down" for bogey most days. :)

Taking 2 shots to get into the hole with at least being played from off the green with a wedge or iron would be my definition. Therefore, isn't an albatross an up-and-down from the tee of a par 5?

i think according to the PGA Tour stats an Up and Down is anytime you get the ball in the hole in 2 shots when the first shot is within 100 yards of the green

This is how I consider it as well... But in relation to par, no? E.G. Miss the green on a par 3. Chip it to wherever on the green and drain the putt. Par 4s - Off the green in 2 shots, chip it on the green, make the putt. So on and so forth...
