Confused, wrong shafts but...

I had regular flex graphite recoil shafts installed in my paradym x irons, and they didn't shave the tips, (lettering is covered partially by grip_. so according to PGA superstore club fitter, the shafts will make the ball go higher..I don't know if that's a good or bad thing...let's say for my 7 iron, what range of peak height is acceptable? What metrics would indicate the extra height or ball flight  is acceptable???

Trimmed, not shaved.  Sounds like they were soft stepped. IOW, trimmed less or not at all to play more flexible which is some cases will translate into a higher ball flight.  
Ideal trajectory is not just about height.  It seems your fitter determined you needed more hight to achieve a good trajectory-for you.  
 

Are the graphics on your clubs all in the same position relative to the grip, or do the graphics get closer to the grip as the clubs get shorter?

Varies per person.  Looking for ideal launch numbers has everything to do with a person's consistent mechanics.  I like my flight to be more on the low/mid-side.  As long as my 7i delivers expected flight and distance, that's all that matters to me.

Soft stepping one time changes the flex about 1/3.
i.e. 7 iron shaft in an 8 iron.  So SS 3x to equal one flex.  So a 6 iron shaft in a 9 iron.  
Flexes of golf shafts are all over the place, one brand/model stiff is anther brand/model regular etc. No standards in the industry.  Then there are various profiles of shafts low, medium and high bend point, as well as torque 1.2 deg steel to a high of 5+ in graphite.  And more.  They all have different feel characteristics, what works for one, doesn’t necessarily work for another.  
 

Your fitter determined what shaft, flex etc. you need and they were built with that in mind.  Sounds like you’re overly worried about what you have , suggest you just go play them and after a few games if you have questions go back to your fitter and sort out your questions.  
 

And I mean this sincerely , it would serve you well to use the search function to gain some understanding of various terms and subjects.  This forum is a treasure trove of knowledge if you have the energy and persistence to sort the wheat from the chaff.  

But by all means keep asking questions.

If they weren’t tip trimmed the graphics would progressively disappear under the grip as the irons progressed from longer to shorter.

So it would be obvious to the maker the instructions for trimming per manufacturer am I correct. That would mean they had to go by the OP’s results from his fitting. I’m confused as to why unless that is the recommended for install.

Assuming the maker was competent, he would know the standard trimming instructions for that specific shaft.

I interpret that the fitter specified a soft stepping of the shafts, which is why the graphics ended up partially under the grip.

The relationship between shaft stiffness and launch angle is anything but simple nor is it automatic.  Some might see no change, some others might see a noticeable amount - with am's the former is a bit more likely than the later.  And changing stiffness can potentially do other things to the swing.  Everyone can be different.     And that's with any bigger stiffness change.  If your clubs really are just soft stepped x1 or even x2,  it would be rare to get a significant change to the ball flight compared to the those same shafts being installed straight in.

 

So the ONLY way to answer the question of how changing the stiffness will effect the ball flight is to go out and hit the clubs and see how they feel and what happens to the ball flight.   It's not something anyone here can answer for you.

Ok, I will test in trackman indoors at the local PGA superstore...If I am hitting a 27 degree what range should I shoot for, metrics wise? I have no idea if a flight is decent or not, and it's ice outside...That's the issue..So If I hit a 27 degree(strong 7 iron for pardym x) Do I focus on peak height, distance? If so what is the range for peak height I should shoot for? I am hitting it around 165 yards right now.

Peak height and decent angle are the two metrics that are kind of tied together. Really depends on ball speed. But focus should be more on that than distance. It doesn’t matter how far it goes if it doesn’t stop.

what store are you going to?

ask the Studio fitter to look at numbers.

Hey I went to the PGA store and disappointed myself...I was have 20 yard differences between shots...Some hit off the hosel, 140ish yards, others went around 170 for the 27 degree.. I average around 80 feet peak height...... I guess with inconsistency--it doesn't really matter whether my shafts are correct or not???

Hitting off of a mat indoors frequently messes up the spin numbers -  off by as much as 2k in some cases.   And without accurate spin numbers, you're not likely going to get accurate height or decent numbers.     Hitting off of a small tee might help.

 

There are no ideal target numbers.   Your swing is going to be, by far, the dominant factor at what you are able achieve and what you'll see.  Mainly swing speed, dynamic and spin loft, face-to-path, shaft lean at impact, etc...  The equipment just allows some tweaks to those numbers.    Messing with the equipment might allow you some leeway in balancing out carry distance vs stopping power on the green - and you're going to have to make the decision on where the best balance is for you and your game and the courses you play.
