Three weeks before the casino opened we finally gained access to the restaurant. It took a good 10 days to set it up. We had hired roughly 80 employees for both the front and back of the house. The restaurant featured a display kitchen. Chef and his staff were out in the open in the middle of the dinning room for all to see. That is great for the dining experience of the customer, but it is a pain for the staff due to the fact you were always on stage. Right out of the gate we were doing 250-300 customers a night. The place was very popular. We had a private room in the back for parties with it's own cigar bar, and even a large live lobster tank. The restaurant had a lot to offer. It turned to be one of the most fast paced joints I had ever worked in especially given the price point.  Chef Parker and I worked together there 3 years.  On many a busy night right during the rush Chef would shout to me to, "LP, get me one!" That was code for me to run to the bar and pour two fingers of Tanqueray neat in a small glass. I would take it to chef on the line and he would slam it. That pop would get him though the rush. Yes his shot of choice was about a 3 oz. pour of room temperature gin. Nasty tough British bastxxx that chef P. 😆 Chef was married with 3 young daughters at the time while commish was unattached.

Finished taking care of the Sweetheart Brunch attendees today and watched the final 9 at Pebble. There are what we call in the business 3 big  amatuer days. Valentine's, New Year's Eve, and Mother's Day. So many are obligated to get out and do something nice on those days. Probably my almost 30th VD day that I smiled too much.  I like romance a bunch and get the celebration, just saying again the rooks come out.  I have a tee time Tuesday in S.C. It is to be sunny and 55* and was thinking ahead to that. I am looking forward to see if the streak continues. It is my regular course that I feel the most comfortable on and we know that helps the mental side. I'm on borrowed time though c'mon.  LOL 

Then I did the tabulation of week 1's results. I expect all kinds of lead changes during this contest involving TOUR action. I believe in the end many will be happy we followed jerebear's suggestion and keep the band together and the Tour Bus hitting new cities each week.

Commish is a solid manager.

our Hilton years when our alcoholic French Sous chef Alain, kept hitting us up

for Heinekens for a nice Noisettes of Lamb in return. Or perhaps some Trio of Medallions  We were the keepers of the bar and wine locker. Money sucked but the times did not.

Chef and the Court Jester.........

 

I will never forget that shift. It was a Saturday night so that meant " the crush" shift was before us. On Saturday's the place was already packed by 5:30.  Following the line up meeting of the entire staff chef says to me that he wants to tell me something. I had been involved in this crazy restaurant hustle with Chef Parker for 3 years at this point and sensed it was something serious. 

 

 

" LP you see that saggy big  t**ty cocktail waitress out there?  "(our restaurant had front that opened up to the casino floor) 

" I have made the decision that there is no way I am raising my girls in a town where they have a good chance ending up like that."

" I have to leave this place and seek a normal upbringing for my daughters"

"I have hired a professional employment firm and told them I would like to get into the private club business around golf" 

"LP we will stay in touch, but I am out of here as soon as our house sells"

 

I was rather surprised, but man did I get it. I have had 3 very good friends( couples)  from those days see the light just as Chef Parker did and have commended them endlessly for doing just that. I knew I was losing my very good friend, coworker, and golf buddy. I was not thrilled with the idea of a new Head Chef. Heck I had been with Parker since day one. Hell before day one. Back to the employment center months before opening.....since forever.  Yet I knew that if I had small children I would view the situation in the very same manner.

Thanks doc and here is to our 30 year friendship. We have lost a handful of teammates over the years but we two old dogs carry on. 

Do Not forget the other one I was a professional at. You come in with a female and you don't get a check Mr. Assistant Pro and when I come to golf early in the week to your course with buddies we don't have green fees.
