"Why do you use a 2 iron when woods and hybrids go farther, are more forgiving, more versatile, and easier to hit?"

No room exists for 1 irons anymore as the OEM's pinched the lofts to make consumers think they hit irons further.  The gap wedge wasn't a thing 30 years ago....

You'll have to go back a little further than 30 years to make sure you're totally removed from gap wedges. Tommy Armour 845 irons were available with a ~52* wedge marked "W3" to go between the pitching wedge and sand wedge. Released in 1988 I believe...

No reason to. The hollow heads are so much easier to hit.

Can't see why anyone would.  I don't even know of any pros that do.

Martin Trainer was carrying a Wilson Staff model blade 2 iron on tour last year. Haven’t seen his bag this year but I know he was using it last year , awesome looking club.

Forward CG and Gear Effect

Other than looks and feel preferences, shorter lengths promoting strike consistency, and the general awesomeness of hitting a perfect long iron shot, DIs do what they do vs hybrids and fairways because of their more forward CG.  Sorry to get technical...  Forward CG promotes less forward bend of the shaft and lower dynamic loft, but also:

The closer the CG is to the face, the less gear effect there is.  So an off-center hit on an iron will twist and lose ball speed, but it won't give as much curve from gear spin as a hybrid or FW.  Any curve will be from how you deliver face to path.  "It just goes straighter" or "You get what you put in" kinda deal.  Hybrids and FWs with more rearward CGs will bring more gear spin into play, and the amount depends on your strike and how high or low the head MOIs are.  That's why loft for loft, and length for length, there are still dynamic impact differences between clubs.  Of course the chunkier the iron, the more it plays like a hybrid.  The results of horizontal and vertical gear effect can be a big part in why we like or hate clubs, dispersion we see, etc.

IMO the ideal driving iron has a CG right on the face, high MOI from toe and heel weighting, and CG height correlating to where you normally strike.  See the post and thread below comparing irons and hybrids, and talking about irons like Nike Vapor Fly Pro that we still see around:
