I've had it for at least a year, but I just recently opened up Kenji's Food Lab and have a few things I need to try. I bought a whole chicken for some reason today because I saw in it there. Not his book, but I also just made his sous vide pulled pork for the 2nd time. 24 hours in the sous vide, 90 minutes in the oven. My roommate is out of town, so I basically have to eat 8 pounds of pork by myself this week.

 

His spatchcock chicken was a game changer for me. I make it all the time. Usually the simple version, but the one with jerk spices is my favorite so far.

 

Really, everything in that book is amazing. The pancakes. Roast potatoes. The steak in my avatar. Prime rib. Chili. Chicken soup. Everything. Hell, his hard boiled eggs, even.

I made Kenji's 1 minute Hollandaise on Valentine's day and it turned out amazing. Him and Alton Brown are my two go-to resources for all things cooking.

I bought a whole chicken so I could spatchcock it. But then I read more and he said this water cooled chicken I bought is trash. So now I have to throw it away and go buy an air cooled chicken.

we got the notice that we're closed. I'm already logged in remotely.

 

we're not getting any in Baltimore, but I've heard 3 traffic reports so far and every time he comes on, the snow is getting closer. It was south of DC, then Dc burbs, then he just came on and said PG County and Millersville and all that. All MARC trains canceled.

Closing in on two inches in my part of Alexandria. Could have gotten to work this morning no question - but getting home would have been dicey. Had yesterday off for an appointment and some simulator time so this has been a much needed 5 day weekend.

I was looking for a bit of good news data, and found a small glimmer of hope.

 

Based on YTD rainfall, the normal projection puts us at 40 inches this year in Baltimore/Washington. Even if we go over that by 20% and hit 50 inches, that's still 20 less than last year.

 

So that's nice.

So this weekend I was flipping around the million sports channels I have on Directv. One of the regional sports networks had some sort of golf/travel show on that was at Pine Needles. They talked about the renovation and played all 18 holes. They went through kind of a 30 second pitch on what each hole was, features of the hole, really good drone footage etc. The production value was pretty decent - it was some random pro who is the host and in this case it was Holly Sonders - but the show was not as terrible as I thought it would be.

 

I ended up watching the next show on Nemocolin which was on the "new" Pete Dye course there. I say "new" because I dont know when the course actually opened so its tough to say how old the show was. But I'm pretty sure they said it had been open a year and at least he show *looked* pretty recent. This time it was random pro and I think a couple of LPGA players, they did the same format playing the course, talking about the resort etc.

 

I checked out their schedule and they are doing shows on a couple courses in Utah that look interesting and one on Arcadia Bluffs. Some of those shows can be pretty awful but as travel/golf shows go, it was worth the DVR. I'm a sucker for golf course shows like that with really good drone footage.

I'm saving my judgement and distress about weather until mid April. That's about the time of year I expect consistently golfable weather here. Basically anything goes before then.

It's February so I'll allow it. But it's getting to be late February now, so I'm getting itchy. The last 12 months has easily been the least playable 12 month period in the last 10 years. We deserve some good fortune.

sometimes i literally have no clue who is going to win a tournament or how to make my pick. i have a little list of guys that i feel like are versatile enough to use anywhere and not good enough that i care about "burning" them. i took someone on that list for mexico. just no clue what's going to happen. really flat payout structure too once you get past the first couple spots. Like the difference between 6th and 17th is kinda meh. so win, 2nd, or it's all the same. so either take an elite or go down the list for your pick is my strategy in WGCs.

Our pool is normally -350,000 points for a missed cut but this week with no cut, you get points provided your player doesnt WD. So I'm more inclined to take a shot with someone towards the bottom of the Top 30 guys that may be ready to make a jump. Tough to go with anyone thats played the last couple weeks and then has to go to Mexico, so I'm going with Gary Woodland. Trending pretty well and has had some rest.

For me? I dont stray too far outside the Top 30 players that week or Top 20 if I can help it. For most people? They still take shots at guys way outside the norm, trying to take chances, be clever and find that win. No need to. The winner last year only had ~9,000,000 points at the end of the season. Its more important to pile up made cuts and throw in 3 or 4 wins than take the chance on missing cuts.

ours is double money for players and majors. winner had 16 million last year. looking it up he'd have had 14.5 if majors were 1.5. that thing is full of legit gamblers who actually are better at this than people like me. he picked horscel/piercy at zurich, aaron wise at byron nelson, bubba at the travelers, kevin na at greenbrier, andrew putnam at barracuda, brooks at the PGA. he got 2nd place correct at a WGC for a mil, and 2nd place at the masters.
