Chipped Pork Sandwiches vs Pulled Pork Sandwiches (or good vs evil)

I used to live in East-Central Alabama just across the Chattahoochee from Georgia and every BBQ joint offered chipped pork sandwiches. Super cheap. Super tasty. Ideally with spicy mustard based sauce, BBQ slaw and pickles. Greasy, crispy, pork goodness.

 

Moved away about six years ago and I still dream about those things. I make them at home, but it isn't the same.

 

Recently had the opportunity to get back to Georgia this summer and all I could think about was those damn sandwiches. I was in East GA and Atlanta however. Stopped at every roadside place I could find and it was pulled pork as far as the eye could see. It's just my opinion, but pulled pork sucks.

 

Are chipped pork sandwiches that regional? Are they just an East Alabama/West Georgia thing? Anyone help me out here?

As far as I have seen it seems it is a East Alabama West Georgia thing with the mustard based sauce. It is also a thing in the Midlands of South Carolina. As far as me I am the pulled pork type guy with vinegar based sauce but in reality I can eat BBQ done just about every way. Being an ex Truck Driver I have ate BBQ everywhere in the USA

Yeah, I'd always heard about it being a thing in SC. And yes, vinegar based sauce is a must. And I do like all kinds of BBQ, but Alabama roadside has a special place in my heart. I'm a homer. 

 

I take it you know of the sandwiches of which I speak? I'm not crazy, am I?

Please tell me it's not as disgusting as boiled peanuts.  Driving through Alabama, I kept seeing the little shacks selling boiled peanuts.  Heck, I got to have some, right?  So I stopped.  Yuck.  Man, I don't get it.

... I grew up in Greensboro NC home of legendary Stamey's BBQ which was pulled pork with a vinegar based sauce. They started their hickory smoked pit at 3am for lunch and dinner that day. Main restaurant was right across the street from the Colosseum and on tournament days the line was a long way out the door. Went to ECU in Greenville NC and they used that nasty mustard sauce, so I started bringing sauce from home. Mustard sauce is for people that don't like the taste of pork because it is so over powering. Kinda like catchup on steak or a Kids Happy Meal sauce for adults. 🤪  Worked in Athens and Columbus Ga and never saw chipped pork.

Interesting. Athens is obviously a world unto itself, can't say I ever cared for it much. Boulder in Georgia.

 

But Columbus and Phenix City are home to the best chipped pork sandwich known to mankind - 13th Street. Several locations on both sides of the river, but the best was in Columbus off north Victory Drive. Also Mike & Ed's did a pretty good job in the region. And then there's Clearview, in Columbus, which is a bit greasier than the others, but still passable. It is just off River Road and Manchester Expressway. Country's was the "big chain" BBQ place in Columbus, and I never really saw what the fuss was about.

 

When did you live there? Only been about 6 years ago for me.

 

And the mustard sauces that I am talking about are, indeed, vinegar based sauces - with a bit of spice. It's my favorite, but I'll take any vinegar based sauce over the so called "sweet Hickory" sauces.

 

And for me, it's not about the wood or how long it smokes, it's about the quality of heat and the cooking techniques. Chipped pork needs to cook at a higher temp and needs a bit more tending, so it comes out drier with a nice crust on the outside and tender greasy on the inside.

 

Chop it up in a food processor and you get the varied character of the meat from crispy to greasy and tender all mixed together. Brilliant.

 

Pulled pork can be done very well, but tends towards mush in so many cases. It's all just one consistency and flavor. Also, many places fail to do it well, unfortunately.

... I loved Athens, Columbus not so much and avoided Phoenix City whenever possible. I was the afternoon DJ at WCGQ in 1976 and only there for about a year before taking an afternoon shift at WZOO in Philly where Cheesesteaks and Hoagies replaced pulled pork as a diet staple. I just can't remember chipped pork, but from your description I would not have cared for it.  And we all love what we grew up eating so I imagine the moist pulled pork and a vinegar slaw on top filled with good fat would seem awful compared to a crusty dry chipped pork. Yet it never made it out of deep red neck country to anywhere else so what does that tell you? 🤣  But I am with you and don't care for the sweet sauces most everywhere else. I also hear the Eastern NC mustard sauce is different than the SC mustard sauce.

Wow man, crazy. Both Phenix City, where I lived (on the GOOD side of the river, as they say), and Columbus have changed a great deal since the 70's, I am sure. I found both to be very pleasant places to live and work.

 

Yet, they still carry the reputation and you can't deny the seediness that comes with a major military installation in the neighborhood. But, they do offer whitewater rafting on the Chattahoochee right through downtown these days.

 

Also crazy that you went to Philly afterward. I happened to move from Phenix City to Baltimore - and hence more seediness - but Philly ain't doing much better these days.

 

Local food wise, having grown up in Colorado, I am not into seafood, so crabs are out. Also, pit beef doesn't make a whole lot of sense to me. 

 

A good cheesesteak or italian cold cut, however...that's some good eating. I tend to hit Jim's Steaks when I'm up Philly way. But, you may have a better alternative?

While at ECU, you should have made it to Venter’s Restaurant or Bee’s Barbecue, or made a short road trip to the original Parker’s in Wilson. Those were best places for chopped barbecue with vinegar based sauce. Bee’s also had pulled pork and ribs that you had to stop by and order day prior to need for ample time to smoke and because they were so busy they refused to answer phone for call-in orders😃

Of course, other issue is that I am a bit younger than you so by time I went to ECU, those heathens that liked mustard based were run out of town 😂

... Other than the sandwiches, I hated Philly as they didn't care much for Southerners in '78 and was only there a little over a year before taking a job at WECU in Chicago. Switched to acting and was there 42 years before moving to Phoenix 2 years ago. Chicago is also a mecca for great food and so far Phoenix has been one huge suburb and I have not found local cuisine to be original. I guess that's because so may residents come from someplace else.

Funny you mention rafting on the Chatahooche as I had a ski boat on the backwater just below the damn and we went up there most every afternoon after my 2pm-6pm radio shift because as you know it doesn't get dark til close to 10pm in the summer. I was offered the 10pm -2am night shift in NYC and after visiting for there for the first time the difference between wall to wall concrete forever in every direction compared to Columbus and the lake, I couldn't have imagined living there and stayed in Columbus until I got a new boss and did not get along with him so off to Philly

... We went to Parkers several times and I brought my own sauce but the pulled pork was drier than what I was used to and when I was there it was a mustard vinegar sauce. I can't remember the name (Bee's?) but we also would go to that shack in the middle of nowhere and they closed when they ran out of pulled pork. That place was awesome. Also went to quite a few Pig Pickings in the woods only a local could find in the early 70's where you took your pork right of the pig rotating on the spit with some blue grass played by folks in bib overalls. I never heard of Venters. I was also a broke college student with meals part of my tuition/room fees so eating out was a luxury.

Again, crazy. Totally feel you on Phoenix - although my experience is limited to a single trip. I went expecting to run into decent Mexican food without much trouble, but actually ran into considerable trouble.

 

Which, of course, opens up another regional food issue - green chili. I never knew it was such a hyper-local Colorado thing. You can find it in New Mexico too, of course, but it isn't the same. Anytime I go back to Denver to see family or friends, I drive straight to Chubby's from the airport.

 

And yeah, the upper stretch of the Hooch through Columbus was extremely pleasant. I used to hang out in Bibb City on my lunch hours, but if you are talking ski boats, I'm guessing you were up on Lake Oliver with the Green Island crowd? I never got up that way. I feared my refined sense of dirtbaggery would not exactly gel with the scene. 😀

 

I also feel you on NYC. I lived in London for several years. Waaaaaaaaaay too much concrete.

Man, can't we try to find some common ground in the fact that mustard sauces are also vinegar based?

 

I do appreciate the reference to "chopped" BBQ. Chipped BBQ is chopped BBQ's estranged cousin who lives out back in the old trailer littered with Natty Daddy cans.

... I don't know exactly where it was because my buddy had a trailer in the woods and I docked my boat at his place. Local blue collar boys and far from fancy. He had two vicious dobermans that lived inside/outside with a doggy door in his trailer which that protected the place and it was really a shack so full dirtbaggery. But I just left my modest little boat tied up to his dock and never had any theft problem though again it was in the middle of nowhere. My guess is just south of Green Island CC but back in 77 I don't remember any CC or even homes anywhere near his trailer. We had to go down several country and unmarked dirt roads to get to his place. But like everything else, it has probably filled in completely since then.

My guess is just south of Green Island CC but back in 77 I don't remember any CC or even homes anywhere near his trailer. We had to go down several country and unmarked dirt roads to get to his place. But like everything else, it has probably filled in completely since then.

... Too funny, I was just getting ready to say the same thing! I think that was my happiest times in Columbus working at a fun radio station when radio was a blast and spending so much time on the lake with good friends. Just enough money to get by and for the first time actually had my own apartment and didn't have to share with another DJ. To be fair I grew up dirt poor with a military dad supporting 3 kids one a sergeants salary but did well for myself s an adult so I kinda straddle both sides but my roots are in poverty and that never goes away. As you probably know poor kids don't know they are poor because back in the 60's life offered so like rivers, train tracks, parks/playgrounds with water fountains, 2nd hand bikes and all the sports you could cram into a day. 

... And apologies but I am just not a mustard guy, let alone a mustard BBQ sauce kinda guy. I never ran across the Alabama white sauce. My experience with Alabama was playing Sweet Home Alabama on the radio and having caller request it minutes later and when I told I just played it they drawled "Surr we knowed that but figgur you kin just play it agin!"

... I played Bball at a local Y and although clearly the best player, even after a year I was always picked last with "OK we got the new guy". When you are 25 a full year seems like forever but I was still an outsider. Definitely the best sandwiches for anyplace I have lived. Norristown had a place with a doorway to the bakery next door and they would just walk through and grab some freshly baked rolls. I sampled so may shops and certainly had my favorites and of course none would be Pats or Gino's with their nasty cheeze wiz. I never found a place where the cheesesteak and bogie were equally good, just seemed like it was one or the other.

... As you might remember I was invited to a try out for the ABA, but they expected me to play defense LOL. This was a suburban Y, not Philly street ball or downtown/south ball. Just a bunch of decent ex high school players.

Seriously both are good, but fresh roasted Hatch chile is the gold standard! 
 

I work in the Four Corners area , love the smell of roasting chile in the fall
 

As for pork, I grew up in western Kentucky, so pulled pork shoulder, mutton, bbq bologna, with a vinegar based hot sauce were the standards.

All of this Philly talk reminds me of my years there. We lived a couple of blocks below South Street in a skinny four story. There was so much good food within a five minute walk that our fridge rarely filled up. I worked in Northeast so we played at the lovely old Ross, Torresdale-Frankford CC. Good times!

A fond memory for sure. Those look like you did them yourself (respect), but I'm reminded of the giant cement mixer rosters. Hatch chilis are the standard. I'm left to anaheims for the most part.

 

I grew a bunch of Hatches in 5 gallon bucket on my stoop last summer. Made a couple of batches of green chili with them.

 

Went with mini-bells this year - but thinking of going to a strictly pepper based vegetable effort next year. Miss the hatches.

Well, I'm sure someone will come along and pillory me for this but...

 

If you don't know Alabama white sauce, you're in for a rather unpleasant experience. I think it may just be ranch dressing thinned out with vinegar. I've given it an honest go, and I can't say I see the appeal. It is apparently popular in north Alabama but I couldn't say where.

 

Beyond that, hilarious about "Sweet Home." People in Columbus, West Point, and LaGrange - all up and down the Georgia side of the river - would always talk about how they "went over to Alabama" to some bar or whatever.

 

The stories all ended the same way: "When 'Sweet Home Alabama' came on, people just went nuts. We had to get out of there."
