So my buddy Parker is in Memphis with Cantlay this week. During one of the practice rounds he had some BBQ on the course. The ribs were so delicious he went downtown on another day to eat more and see the restaurant. Vergo's he learned is a Memphis tradition. 

If Parker says they make some of the best BBQ then I know it's special. They will ship their BBQ to you via FedEx.

Yes, I’ve been a Rendezvous fan since before John Grisham made it famous. A customer of mine in Memphis introduced me to the place long ago, along with parties up on top of the Peabody Hotel and usually ending the night at the blues clubs on Beale Street.

 

Rendezvous also got me to change my rib technique. Used to sauce my ribs as part of the cook. Now I prefer them with a dry rub and sauce on the side.

... Now that you are a Homeboy, I had to move from NC to find out "Bar-B-Que" isn't Pulled Pork. Having lived and dined on puller pork all over the country, nobody does it like Central NC. Hickory Pit Slow Cooked every day. Not Ribs as I have had great ribs all over the country but pulled pork takes a back seat everywhere outside of NC. Fwiw, I never even heard of Brisket before moving to Chicago. Beef Bar-B-Que?!?!? 😱

... Interestingly, we had a guy move from Statesville NC and opened a Bar-B-Que restaurant in Naperville and it was like being home. He quickly realized he needed to offer other style sauce, ribs and chicken from other parts of the country because "the dam yankees didn't know what real Bar-B-Que is". I really miss that place.  There is a Pulled Pork place here that is close but their sauce is a sweet tangy sauce from Mississippi that doesn't belong on Pulled Pork.

... It sounds awesome!!!  I am talking restaurants of course and I know quote a few folks that make killer Bar-B-Que at home. I am good making ribs on my Weber but pulled pork remains a mystery. Of course I don't wake up at 2am and put the meat on some hickory wood and slow cook for 8 hours. 🤪

My last one took 16hrs! 😱

Mine tends to hang out for 12ish hours but depends on the size and when the stall happens. A particularly big one was on for almost 20 last summer. 

 

 

Whole hog - which you get at piedmont NC spots - is far, far better than just a shoulder but I take what I can get out here. 

 

I'll brine it in a mix of half salt water, half apple cider overnight the day before. Other than that, just a pretty standard approach. My sauce is an adjustment from the great Dennis Rogers of Raleigh's News & Observer fame.

I tried stuffing a whole hog in my Traeger… It wasn’t pretty!
