Heard yesterday they're playing from one box up from the tips - IIRC its @ 300 yards less.

Damn, I did not know there was quite the level of hate for ranch. The best type of wing is one that needs no dipping sauce, but I've never been able to get used to Blue Cheese. I prefer to not have my sauces clotted up.

If neither, Alabama White sauce is amazing on wings.

Love blue cheese too - but nothing is worse than going to a bar, getting a little dish of blue cheese and there are just huge chunks of cheese in there so theres no way to get the wing covered.

Also, Buffalo Wings are one of those cuisines that are named after a region and the region has never felt the need to improve or improvise and consequently the regional versions are worse than you find elsewhere.

they do that thing where they detach the ligament or something and push all the meat up top and they tend to get a nice fried breading. Only complaint is sometimes they go too sweet.

Something I heard on Hot Ones. . .I've always referred to the two types of wings as drummies and "not drummies", or drummies and "winglets" or whatever. But, on Hot Ones one day, a guest called the other ones "bows". Perfect name for them. You instantly know what I'm talking about if I say "I prefer the bows to the drummies".

Well, not you guys who eat boneless wings.

i got roasted by my customers last week for liking my burgers cooked a little more thoroughly. i just think some char is good on a hamburger. ground beef != steak

Especially if it's a thin smash burger. I've been taking the downtime to mess with my sous vide temperatures a bit, and I've found that ribeye is VASTLY superior in the 135-138 range, which makes it basically medium after searing. The fat renders out much better. I wouldn't even think about cooking a NY strip at that temperature though.
