I just got the new 21° UW with a Tour AD TP 8s. It was a free shaft option and it works really well so far. Very stable feeling with high launch. 
 

I had the previous model in 21° with a Attas T2 8s, which also worked well with launch and spin. 
 

The new UW has much better turf interaction for me from what I can tell. Distances appear to be similar in terms of gapping between my 4 hybrid and 4 wood.

I have the original UW and just got the newer version, both in 19*. The original has the Tensei AV White and the newer has the stock MMT. The Tensei white is pretty stout for me, so I tend to hold on and hit pulls with the setup. It’s long and low spin.  The newer UW with MMT is easier to hit and has a higher flight.  I’ve only hit it on the range once, so I’m curious to see how it performs on the course.

Tour AD HD 8s for me. Launches higher and spins more than the stock shaft for me.

I’ve had a lot of success with the stock shaft. Never was a fan of it and it hasn’t worked with other clubs but it mirrors perfectly to this head for me.

I got mine with the Ventus Blue 7X off of CPO - I was slightly worried it'd be too light for the 41" length but at 77.5grams it's not too light IMO (only 2.5grams lighter than the stock shaft). Plus the fixed hosel gives you a bit more shaft compared to if it were an adaptor. And since it's tipped 1.5" it holds up really well to my slightly above-average swing speeds

 

But super easier to launch high or flight down if necessary. These UW's are very hot - my 21* UW goes nearly as far as my 17.5* G425 Max 5wood with the same shaft

AV Raw White 85X, as it was a heavier stock option that holds up to some speed while feeling smooth in the handle.  It's tipped 1" instead of 1.5" to soften the tip section and went .5" shorter than stock at 41".

I've seen quite a few go with Ventus Red/Blue or a GD DI type profile with some weight.  If it's too light, you might struggle like a lot of people with hybrids.

Are you all finding that these are low spin and go further? I’m trying to find a club to fill the gap between 3 wood (250-260 carry) and 4 iron (220 carry). I think I can get this to fly the right distance on a stock shot but I’m wondering if hitting a spinny cut shot to knock yardage off is even possible with this. If not, I’ll pry need to look into a 5 wood.

They are not low spin at all for people with slightly above average speed, which you certainly have with those distances. 19* might be worth testing but I'd recommend the 21* considering how hot this club is. I have similar distances as you (same 3 wood distance, 4iron 210-215 carry) and my 21* UW carries around 240 on a center strike and 230 on slightly off-center. The height/apex and spin is naturally very high for me, but I can hit lower spinning bullets too if I want - it's super workable and maybe the straightest wood/hybrid i've ever hit, I have yet to hit a duck hook that I often would with a hybrid, and I have yet to hit a massive ballooning slice that I do on occasion with my 3-wood. The ball just wants to stay in play with the UW even with my worst strikes

Unfortunately - they don’t make the 21* in left handed or I would have purchased one a while ago……

19* might even be the better option for you in terms of gapping, who knows, I was just thinking that the 19* migghhttt creep into your 3wood carry range but I could be wrong; I mean it's only 2* stronger than the 21*. You're gonna get what you're looking for in terms of launch and spin, especially if you pair it with the right shaft

It's been made in both the 1st and 2nd generations. 

 

1st Gen - Tour only

2nd Gen - Tour and Japan only

 

If they wanted to release a 23° in the US, they would have. For whatever reason, they opt not to.

Classic Callaway making things difficult for no good reason. Callaway has to have more 'Tour Only' clubs (i.e. the new TCB's and this 23* UW) and JDM dedicated products than any other OEM

If they wanted to release a 23° in the US, they would have. For whatever reason, they opt not to. 

I think the reason (though I could be way off) is that if you look at full sets of irons in the US they are typically 4-PW (maybe GW) whereas in Japan it's 5-PW. That being said, more and more golfers here in the US are ditching the 4 iron too. So I'd imagine it has to do with the demand.

If you want it bad enough, there are ways to get it.

Remember when a 4 iron was 24*?   Now my 5 iron is 23*.

I still play traditional lofts. But I hear what you're saying.

 

My point is that if you go looking for a Japan only set of irons, most will be 5-pw. It's becoming more and more difficult to find a 4-pw. In fact, the last time I was looking on tour spec many sets were 6-pw. That being said, it's seems logical that the 23* would be offered in Japan.

Last year I got the new UW in a 21* head to replace an old Steelhead 7 wood I used- well, it turned out to be almost as long as my 5 wood -215 instead of 220. So this year I get the 17* (OG off of CPO) and it replaces my 3 wood- 240. (I can choke down and hit it 230 - so now real gaps)  My bag is driver two UW’s and 5-AW and two wedges, making me one short. Options, options. I think I’ll go with a 3 iron for punching out of the woods… maybe a 3rd wedge. Crazy how versatile these UW’s are.

Love to hear that. But surely there has to be a large gap between the 21* and your 5iron, no? Why not add a 4iron/hybrid/driving-iron?

No- 5 iron is 23.5*. So far so good. I haven’t had these irons long- 3 rounds so far. If I see a gap developing, I’ll reassess.

I have the 21 uw and ping’s bp-s 5 iron. 
 

Latest sim numbers showed 28yrd carry delta. Not too bad.. and I bet on a more traditional mizuno blade’s loft it would be more. 
 

One thing I really enjoy about my uw build is I can lay off the club. Not worried about the gap
