The new website is wacky...At times, I've started to comment and got distracted and closed the browser only to find the comments still in the box the next time I've visited the thread...Also, on mobile I've posted comments only to have them still be in the comments box the net time I visited...Hopefully they'll get this site fixed 100% sooner than later...

The unfinished comments saving for future use is a "feature", not a bug, of the Vanilla forum software. You can delete it from "Drafts" in Quick Links in the upper right corner of the page.

Ya it looks like it saves drafts, so even if you type it up and say nah I don’t want to send. I literally typed this and said nah... and then clicked back on this thread and half of what I typed was here...

Finally got out for another round today with the new K Sig ball. Swing is feeling pretty good, the tricep is healing up nicely, so I'm swinging a bit more aggressively. My approach is slightly different although RS's is on point.

 

I put them in the SV for about 90 minutes at 128 with rosemary and garlic sealed in the bag. Using just the chimney, I get the grill up to approximately 750, put a bit of mayo on them (don't laugh, it's oil based, cooks off immediately and you never taste the mayo) and leave them for approximately 60-75 seconds a side. It does a nice bit of char and is just wonderful.

While you can't go wrong with the above (mayo is an excellent fat to use on meat as well as grilled cheese), my favorite way to finish the steaks is in a sizzling hot cast iron pan heated to about 650*F. Get the cast iron up to heat and then put two or three _drops_ of avocado oil on one side of the cooked meat and smear it around to cover the entire side. Then, put the meat oil-side down into the pan and keep it there for 60 seconds. While it is cooking, put two to three drops of oil onto the top side so it is ready to be flipped. Flip the meat onto the uncharred side, cook for 60 seconds, and then remove.

 

It is imperative to use avocado oil as it is the only oil I've been able to use that doesn't cause a smoke storm (we can't use peanut oil because our son is allergic to peanuts). And do not put any oil directly in the pan, because at 650*F, any oil will burn; when it is put on the meat lightly and then the meat put into the pan, it will not burn.
