Cold Weather Evening Meal

Yesterday, the wife made meatballs in a chili sauce in the crock pot over Jasmine rice with steamed Brussels sprouts.  The condiments/sauces at Lidl are excellent.  She used two bottles of Lidl chili sauce and one bottle of Lidl Thai Ger sauce.  The Thai Ger sauce is fantastic if you like a sweet and spicy sauce.

 

Today she's making spaghetti pie. 

 

We've tried making soup but it's not as easy as it would seem to be.

Soup is always my go to when it's this cold out. Any kind really but my favorite is Chicken Noodle.

 

High of -10 today and low of -27.

The high today here in the Sacramento mountains of southern New Mexico was 5 degrees & a new foot of powder.  We have a pot of chicken & dumplings simmering on the stove.  It's clear now, 3 degrees & dropping, but sunny still.  Supposed to get more snow tonight with temps below zero.  This extreme cold is uncommon for us.  I played 18 holes yesterday.....no golf now for a while.

for the record it’s brutal here today. Temp around zero, wind chill -12

Just finished my wife's leftover chili from earlier in the week.  One of the few foods that is just as good a few days after as it is the day it is made.  She makes a steak version, and it brings some heat (I think it has a dash of cinnamon too) that gets stronger as it sits in the fridge.

 

Here in Iowa it's -10 with -30 wind chill.  Our high today was -7.

That's really cold and we think it's cold in NorCal when the temps are in the mid 30's - 40's.

The Tap Room at Pebble has really good prime rib chili and cornbread.

Well. We’re supposed to get freezing rain tonight followed by high of 39 and rain tomorow.  So I’ve preemptively put on a big pot of great northern white beans , with a big piece of ham inside.   I’ll have a pan of cornbread , and several  selections of pickled beets , homemade sweet pickles and some chow chow to go with.  That’s tomorow night.  
 

 

last night in the cold we had a grilled pimento cheese sandwich and my potato soup.  I make it thick with big potato chunks ,and  some of the aforementioned ham sliced small . 
 

tonight it was over 50 so we stayed outside till dark enjoying the sun.  So I’m making chicken tacos. Simmering some thick chicken breast right now with some white wine and butter. Salt  and pepper.    And a nice pasta salad to go with.  Something quick and yet filling.  After all. I’m not Tiny and i have a near 6ft tall 12 year old boy who is an expert chow hound. I love to cook and he loves to eat.  Anything and everything.

For cold weather, my favourite is probably tonjiru (pork soup) made by my wife. It's got thinly sliced pork in it, burdock, sweet potato, daikon, potato, and sometimes Jerusalem artichokes, and flavoured with miso and grated ginger. The ginger really warms you up.

And speaking of the weather, until yesterday, we had two or three days here of freezing weather and biting winds, then today we've got sunshine and highs of around 50-55*F, and over the weekend we're going to be basking in temperatures around 70*F.

 

Don't think I've ever experienced such a dramatic change in temperatures in one place, but I do know that I'm bringing out the barbecue on Sunday.

Works for me.

 

I use this recipe except I substitute brisket instead of chuck, add some corn and use mostly curry powder instead of chili:

Ok, this is for you! Your post must have inspire me cause I got this for lunch. That’s a slice with spinach and dollops of riccotta and the other is sausage with peppers and onions.

I'm a big fan of Chili.

I make a mean tasting Chili.I've tweaked my recipe over the years playing with the spices.

I make large pot. I eat it all week. Every meal is better than the one before. 

My wife doesn't like Chili. It's all mine...

 

My wife's friend brought me over a bowl of her chili to try last week. No beans. It kind of reminded me of sloppy joes made with manwhich. I think the only spice it had was a ton of salt.

 

When asked how I liked it I replied it's different than mine. She said it's good over rice. what? No cornbread?

A few months ago, after golf ended I found I had a lot of time on my hands... so started spending time in the kitchen playing with stuff, working on some biscuit, cookies, deserts, bread, and especially pizza recipes.

I used to spend a few weeks a year in Michigan for work and took a liking to Detroit Style pizza, so that was one of my goals... to get back into making pizza. (I used to manage a local place 30 years ago, but was not detroit, just a local greek-ish style pizza). So after a while, along with some "almosts" and complete failures, (with the help of some youtube vids) I started getting close. 🙂  I'll post some bread pictures later. Making a tiger bread this afternoon after this project completes compiling.

On Tuesday 2/16, we were at 13 deg F here in southeast Texas. One week later, it was a hair over 70. Gotta love Texas weather.
